Overview
The Food Chemistry Master's programme at the University of Münster also ensures that those who take part will be able to meet present-day requirements concerning relevant responsibilities (including consumer protection). As a rule, participants will already have done the necessary groundwork in a corresponding Bachelor's programme in food chemistry, and they will also be taught the basic principles of the subject in the introductory phase of the Masters programme. All this basic knowledge is supplemented by in-depth specialised scientific and practically oriented knowledge.
Participants acquire both basic and specialised knowledge of the chemical, biochemical, analytical and technological methods used in inspecting food, feed, cosmetics, necessaries, water and tobacco products. They also gain specialist knowledge of nutritional science, toxicology, forensic chemistry, environmental chemistry, molecular biology, agricultural crop science, food law and quality management. The Master's programme includes project-related components and optional elements. Every student has to spend several months working on a Master's thesis.
Programme Structure
This dissertation should furnish proof of the student's ability to work independently and apply scientific methods to a problem which is, as a general rule, connected with food chemistry. The treatise should also provide sufficient evidence that the student can present and defend research findings in an appropriate manner. The programme, which was conceived in close conformity with the relevant version of the regulations for the training and examination of state certified food chemists (APVOLChem NRW), offers students broad-based academic training in food chemistry, and it also allows them to make individual choices in certain sub-areas of their subject.
